Fried Mashed Potatoes started out innocently enough.
These were the ingredients used:
![]() |
| salt, pepper, homogenized milk, salt-free Becel, no salt added butter, red potatoes, garlic, anaheim pepper |
I wasn't banking on the fact that the little bits of potato would make for a difficult mix to mash, and that the char would make the mash a brown-ish colour. My rose-coloured glasses were removed quite quickly! M & E did enjoy the mash, because it tasted like the fry (which is always a hit). Their only real complaint was that I didn't salt & pepper the potatoes enough.
I just wasn't happy with the result. My high expectations are going to be reeled in a bit for the next mash up. We'll revisit this recipe. I might use sour cream or ranch dressing instead of butter and milk, and I might add chives or green onions. The recipe will be posted once it's perfected.
Happy Mashing!
